    Retired professor at University of Puerto Rico, Mayaguez Campus (UPRM) where she
    was Full Professor of the Crops and Agro environmental Sciences Department and Head
    of the Food Science and Technology Program. Founder of the Food Science and
    Technology Multidisciplinary master’s in science Program (1991) and of the Food Safety
    Institute of the Americas (2005) and Agro industrial Innovation Center (2008). Obtained
    a BS and MS in Chemistry from UPRM and a PhD in Food Science from Penn State
    University. Food Safety Professional and Certified HACCP and Sea Food HACCP, Safe
    Quality Food, ServSafe, Supermark and National Registry Food Safety Program,
    National Safe Water, Certified Food Scientist, Lead Instructor of the FSMA courses on
    HAPC for human food and animal food, Foreign Supplier Verification Program and
    Produce Safety Rule. Has supervised the thesis or near 22 graduate students.

    Since 1992 has been coordinating seminars and workshops for the Agro-Industry and
    leveraging outreach and training efforts from USDA/FSIS, FDA and Health Department
    locally and internationally.

    Committee member of the National Advisory Committee for Meat and Poultry Inspection
    Seminar of the Food Safety Department of the Department of Agriculture of the United
    States of America. Research interest in Food Safety, Food Chemistry, New product
    Development. Also experience in Food Safety Consultant for the Local Food Industry.

    Has been recognized by FDA and USDA/FSIS for the leveraging effort in Food Safety
    Outreach for local and international activities.

    In the present time President of Puerto Food Safety and Quality Services, provides
    training and consulting Services locally and internationally.

    Vision

    Educate students and Agro-industry in the production and processing of safe, nutritive
    and high-quality food, from farm to table that can compete in the global market.
